Green Coffee Density
Quick answer
Green coffee density is normally reported as bulk density in grams per litre, measured by filling a calibrated vessel to a defined method. Most East African washed Arabica falls somewhere in the region of 680–760 g/L. Density correlates loosely with growing altitude and with roast behaviour, but it is a rough proxy — not a quality measurement.
What is being measured
What is usually reported as "density" in green coffee is bulk density: the mass of coffee that fills a known volume, including the air between the beans. It is not the true density of the bean material. That distinction matters, because bulk density is affected by bean shape and size distribution as well as by the beans themselves.

Method discipline matters more than the number
Bulk density readings are sensitive to how the vessel is filled. Pouring from height compacts the sample and inflates the reading; tapping the vessel does the same. Unless the fill procedure is consistent, two operators will not agree, and the figure becomes unusable for comparison.
Density and altitude
The commonly cited link runs like this: higher altitude means cooler temperatures, cooler temperatures mean slower cherry maturation, slower maturation means denser seed. The mechanism is real and the correlation exists.
It is nonetheless a loose correlation, and treating density as an altitude readout is a mistake. Variety, tree nutrition, rainfall during fill, processing and — critically — drying all move the figure. An over-dried lot from 1,900 m can read lower than a well-dried lot from 1,500 m.
- Density is affected by moisture content. Compare readings only at similar moisture.
- Different varieties have different characteristic bean geometries, which shifts bulk density independently of anything else.
- Screen distribution affects packing. A tight screen band and a wide one will read differently from the same coffee.
- Naturals and washed lots from the same farm will not necessarily read the same.
Where density is genuinely useful
At the dry mill
Density separation is a real production step, not an analytical one. A gravity table stratifies coffee by density, and the light stream is pulled off as its own grade — TT in Kenya and Tanzania. Pneumatic separators (catadors) do the same job by air. This is where most of the low-density material in an outturn is removed before the coffee is ever offered.
In the roastery
Denser beans absorb heat differently and generally tolerate — and need — more energy early in the roast. A roaster receiving a new lot with a substantially different density from the previous one should expect to adjust the profile. Used this way, as a planning input rather than a grading input, density earns its place on a spec sheet.
Density is not a quality score
A high density figure does not mean a good cup, and a moderate one does not mean a poor one. Use it to plan the roast and to understand what a gravity table has already removed. Assess quality on the cupping table.
