In short
Kenya produces fully washed Arabica with a distinctive clean-water soak, graded by size and density into E, AA, AB, PB, C, TT and T. Its cooperative factory and dry-mill outturn system gives the most granular traceability of any origin in the region — and its grade names describe bean size, not cup quality.
Factories, societies and outturns
Kenyan smallholders deliver cherry to a wet mill called a factory, operated by their cooperative society. The factory pulps, ferments, washes, soaks and dries the parchment. The dried parchment goes to a dry mill, where it is milled as an identified batch called an outturn. Both the factory name and the outturn number follow the coffee to sale.
This is why Kenyan lots are quoted as a named factory’s AA from a specific outturn, and why Kenyan traceability is granular by default rather than as an added service. When you approve a Kenyan sample you are approving the coffee of a defined group of farmers, processed together and milled together.
Estates operate alongside the cooperative system, processing their own cherry and selling under their own names, producing larger and more uniform single-origin lots.
The soak
Kenyan processing includes a step most origins omit: after fermentation and washing, the parchment is held submerged in clean water for a further period, commonly 12 to 24 hours. It is not a second fermentation — the mucilage has already gone. It is strongly associated with the clarity and structure that characterise the Kenyan cup, and it is one of the few processing decisions with a sensory signature that survives across factories.
Varieties
SL28 and SL34, selected by Scott Laboratories in the mid-twentieth century, are the varieties most associated with the classic Kenyan profile. Both are susceptible to leaf rust and coffee berry disease, which led to the development of Ruiru 11 and later Batian, bred for resistance. K7 is also present. A single factory catchment usually contains a mixture, and the ratio shifts as replanting continues.
Regions
The central highlands around Mount Kenya and the Aberdares carry the reputation and most of the specialty volume. Western Kenya produces smaller volumes with softer acidity at generally more accessible pricing.
The grade trap
Read this before paying an AA premium
AA and AB come from the same cherry, picked the same day, fermented in the same tank and dried on the same beds. The only difference is which screen retained them. Everything that determines cup quality is identical between them. The differential is a market convention about bean size, not a measurement of quality — and in many Kenyan offer lists the AB is the better purchase.
There is a legitimate reason to prefer AA: larger, more uniform beans roast more predictably on a tight profile. That is a roasting argument, and it is worth paying for when it applies. See Kenya coffee grades for the full ladder including TT, T and Mbuni.
Buyer considerations
- 1Buy the factory, not the grade. The factory is the variable that determines the cup.
- 2Cup the AB alongside the AA from the same factory before deciding.
- 3Record the outturn number. It is what makes a repeat purchase or a later query answerable.
- 4Distinguish Mbuni from a purpose-made natural. They are different products at very different prices.
- 5Understand the trading route. Weekly auctions at the Nairobi Coffee Exchange operate alongside direct sales, and the route affects timing and sample flow.
- 6Plan the fly crop separately. The May–July crop is smaller and more variable than the main October–December crop.

What a grade does not tell you
Grades describe preparation, bean size and defect tolerance. Outside Ethiopia’s classification, which includes a cup component, a grade designation does not by itself predict cup quality — confirm every parcel on the sample.
