Water Activity in Green Coffee
Quick answer
Water activity measures how *available* the water in a bean is for microbial and chemical activity, on a 0–1 scale, rather than how much water is present. Two lots at the same moisture content can have different water activities and therefore different shelf lives. Most well-prepared green coffee sits around 0.50–0.60 aw.
What water activity actually measures
Water activity is the ratio of the vapour pressure of water in the sample to the vapour pressure of pure water at the same temperature. In practice, a sample is sealed in a small chamber and the relative humidity of the headspace is measured once it stops changing. Divide by 100 and you have aw.
The concept it captures is bound versus free water. Some water in a bean is chemically bound to the matrix and unavailable; some is free and can support microbial growth and chemical reactions. Moisture content counts both. Water activity measures only the part that matters biologically.

Why it predicts shelf life better than moisture
Microorganisms do not respond to moisture content. They respond to available water. Below roughly 0.60 aw most spoilage moulds cannot grow; below roughly 0.70 aw the moulds associated with ochratoxin production are strongly inhibited. Those are properties of water activity, not of moisture percentage.

Where the two figures diverge
- Fast surface drying. A bean dried hard on the outside and still wet inside can read a plausible average moisture while holding free water internally. Water activity picks this up; moisture does not.
- Naturals. Dry-processed lots often show higher aw than washed lots at the same moisture, because of how the sugars and the drying regime interact.
- Recently rehydrated coffee. A lot that picked up moisture in transit shows it in aw before the moisture figure moves much.
- Blended parcels. Combining two lots at different moistures produces an average moisture reading and an aw closer to the wetter component.
Using it in a specification
Water activity is not yet as universally contracted as moisture, but it is increasingly specified on specialty lots and is worth including wherever storage duration matters.
