Green coffee is a dry agricultural product with a finite, condition-dependent life. Most of what a buyer experiences as "past crop character" is a storage outcome rather than a calendar one, which means it is largely controllable.

Quick answer

Green coffee keeps best in stable, cool, dry conditions — broadly 15–20 °C and 50–60% relative humidity — away from direct sunlight, strong odours and ground moisture. Stability matters more than any single set point: repeated cycling between warm-humid and cool-dry does more damage than a slightly warmer but constant warehouse.

What actually degrades

Green coffee does not spoil suddenly. It fades. Three processes run in parallel, all accelerated by heat, moisture and oxygen.

  • Lipid oxidation. Coffee oils oxidise, producing the flat, papery, cardboard character associated with old coffee.
  • Loss of volatile precursors. The compounds that generate aroma during roasting deplete over time; the cup loses definition before it develops obvious faults.
  • Moisture exchange. The bean equilibrates with its surroundings. Both directions are bad — gaining moisture raises spoilage risk, losing it produces brittleness and woodiness.

Colour change from blue-green towards pale and yellowish is the visible marker, but the cup usually flattens before the colour tells you much.

A liner only works if it is sealed and stays sealed. A punctured hermetic bag performs worse than plain jute in some respects, because it creates a pocket where moisture can accumulate without ventilating away.

Realistic shelf life

No fixed number exists

Green coffee life is a function of starting condition, packaging and storage, not of a date. A well-dried lot in a hermetic liner in a stable cool warehouse can remain very good well beyond a year. A marginally over-moist lot in jute in a hot humid warehouse can be noticeably tired in three months. Any single "shelf life" figure is misleading.

  • Track lots by arrival date and cup them on a schedule rather than assuming a fixed window.
  • Prioritise higher-water-activity lots for earlier use — see water activity.
  • Rotate stock properly; first in, first out, with exceptions made deliberately rather than by accident.
  • Re-cup before committing an older lot to a blend that will be judged on it.

Pests and contamination

  • Coffee bean weevil and other storage pests are managed by hygiene, stock rotation and monitoring rather than by routine treatment.
  • Ochratoxin A risk is controlled upstream by drying discipline and downstream by keeping water activity and humidity low. It is not something to be fixed in the warehouse.
  • Green coffee absorbs odours readily. Never store it near fuel, solvents, spices or treated timber.
  • Bird and rodent exclusion is a food safety requirement, not a housekeeping preference.

What temperature should green coffee be stored at?
Broadly 15–20 °C, and — more importantly — stable. A constant slightly warmer warehouse preserves coffee better than one that cycles widely, because every temperature swing moves moisture within and between bags.
How long does green coffee last?
There is no fixed answer. It depends on starting moisture and water activity, packaging and storage conditions. A well-prepared lot in a hermetic liner in stable cool storage can stay excellent well past a year; a marginal lot in jute in a hot humid warehouse can fade within months.
Do hermetic liners actually help?
Yes, provided they stay sealed. They slow moisture and oxygen exchange substantially, which is why they are standard on specialty lots. A punctured liner is worse than none, because it creates an unventilated pocket where moisture can gather.
Is past crop coffee unusable?
No. Past crop is a fact about the harvest year, not a defect. A well-stored past crop can outperform a badly stored current crop. What matters is that the crop year is declared and the coffee is cupped on its current condition.
